1. Pancakes
Ingredients:
- 1 ripe banana
- 2 whole eggs
- cinnamon
- vanilla extract
optional:
- Syrup (sugar free, maple, regular)
- Raspberries
- fat free cool whip
- greek yogurt
*yields about 3 pancakes
Step 1
- smash banana into mixing bowl
- add 2 eggs
- whisk together
Step 2
- whisk in dash of cinnamon and dash of vanilla extract
Step 3:
- heat small burner on medium-high heat
- spray pan with non-stick spray
- pour batter on pan (3 different times)
- flip after approximately 30 seconds to 1 minute
Step 4:
- accessorize!
- top with either syrup, fresh fruit, cool whip, greek yogurt or all of the above!

2. Low Carb Avocado Toast
Ingredients:
- 1/2 ripe avocado
- 2 rice cakes
- 2 whole eggs
optional:
- "Everything but the Bagel" seasoning
- lemon
- red pepper flakes
Step 1:
- Mash 1/4 avocado on each rice cake
Step 2:
- cook eggs in whatever way you desire (sunny side up, over-easy, hard boiled, etc.)
Step 3:
- season with "Everything but the Bagel" seasoning, red pepper flakes & lemon juice

3. Chocolate & Almond Butter Smoothie
Ingredients:
- 1 cup spinach
- 1/2 cup frozen blueberries
- 1 TBSP almond butter
- 1 scoop chocolate protein powder
- handful of ice
- 8 oz water
optional:
- cocoa nibs
- other types of seeds/grains
Steps:
- Mix in all ingredients (in the order listed) and blend on "smoothie" setting or on high
optional:
- top with cocoa nibs for a good and healthy crunch!
