Buffalo Chicken Spaghetti Squash

Another healthy recipe I have tried out and absolutely love! This recipe can also be made vegan, simply by switching out the grilled chicken for tofu or some sort of other plant based protein.


Ingredients:

- 1 whole spaghetti squash

- 4 oz grilled chicken breast

- Franks Red Hot Buffalo Sauce

- dairy-free mozzarella cheese

- garlic powder

- onion powder

- ground black pepper

- olive oil


Directions:

Preheat oven to 400º

  1. Cut spaghetti squash in half, and scoop out all the insides/seeds.

  2. Place face down on glass baking dish and place in the oven for 45 - 60 minutes depending on size. Season with olive oil, ground black pepper, garlic powder, and onion powder.

  3. While squash is baking, bake or grill a chicken breast. After cooking, coat the chicken in Franks Red Hot Buffalo Sauce.

  4. Take spaghetti squash out of the oven and flip it face up. Scrape the inside with a fork to create "spaghetti like" noodles.

  5. Add grilled chicken, dairy-free mozzarella and stick back into the oven until cheese melts and starts to brown.

  6. Enjoy!
